We are going to tell on ourselves a little here: two of the ingredients in this jar came from us. Salt Spring Spice builds Canal Side No. 1 on our Salt City flake salt and our roasted garlic flake salt, then layers in basil, oregano, marjoram, rosemary, thyme, savory, and a modest pinch of red pepper. So when we tell you it tastes good, understand that we are not entirely impartial. We are also not wrong.
What lands on the plate is an herb-forward, garlic-warm blend with an Italian pantry lean and a clean flake-salt finish. There is no onion and no fennel in it, which is a more interesting choice than it sounds. Onion tends to blur herbs together and fennel walks in and takes over the conversation. Leaving both out keeps the basil and oregano legible and lets the roasted garlic sit right in the middle where it belongs.
This is a counter jar, not a special-occasion jar. Rub it under the skin of a chicken before roasting. Stir a teaspoon into red sauce near the end. Toss potatoes or broccoli in olive oil and Canal Side, then roast them hot until the edges catch. It makes an excellent five-minute vinaigrette: 1/4 cup vinegar, 1/2 cup olive oil, and two teaspoons of Canal Side, shaken hard. And it turns a split loaf and a stick of butter into garlic bread with no further discussion.
