Clean Slate Farms plants their garlic in the fall and harvests it the following July. After harvesting, the garlic is meticulously cured in their barn for six to eight weeks, away from the sun and with just the right amount of cross breeze. Once perfectly cured, the garlic cloves are peeled, chopped, and added to premium balsamic vinegar.
